  2. Empty the trout by your fishmonger.
  3. Rinse under cold water and carefully pat them in paper towels.
  4. Flour them, shake them to remove the excess flour.
  5. Salt and pepper them on both sides.
  6. Peel the potatoes, cook them for 10 minutes. at 15 minutes. in boiling salted water.
  7. Heat the oil and 0.7 oz. butter in a pan.
  8. Add the trout, cook on medium heat for 5 minutes. on each side.
  9. Remove the trouts from the pan and place them on the serving platter and keep them warm.
  10. Throw the almonds in the cooking fat and let them brown a few minutes.
  11. Spread them over the trout.
  12. Degrease the pan and make and melt the rest of the butter.
  13. Pour the lemon juice into the hot butter.
  14. Mix and then coat the trout with this lemon butter.
  15. Drain the potatoes, sprinkle with chopped parsley and serve immediately with the trout.
