  3. Return to a Dutch oven and set aside.

  5. Deglaze with the white wine.
  6. Put back the meat, add the chicken broth, it must cover the meat about 1 cm above.
  7. Cook for about 45 minutes to 1 hour (when the meat is cooked, it should begin to detach slowly from the bone).
  8. Reduce by 3/4.
  9. Add the tomato paste, lemon juice, liquid cream, salt and pepper and let simmer a little.
