  2. Cut the turkey into pieces and reserve them.
  3. In a baking dish, put the carcass of the turkey to brown in the oven.
  4. Once golden, put in a Dutch oven with 1.1 quart. of water and 1 bouquet garni without salt.
  5. cook to make broth.
  6. In a large casserole, brown the pieces of turkey with 3.5 oz. lard (or margarine).
  7. Add chopped onions, diced carrots and celery.
  8. Wet halfway up with the broth, add the bouquet garni and cook for 45 minutes. approx.
  9. Prepare the sauce:
  10. Mix the powdered peppers, add the peeled and seeded tomatoes, garlic, sesame, ground almonds, raisins, aniseed stars and 1 or 2 cloves.
  11. Wet if necessary with the broth and put to heat in a saucepan.
  12. Add the chocolate, stir to melt and let simmer.
  13. When the pieces are cooked, strain them and place them on the serving plate and keep them warm under a sheet of aluminum foil.
  14. Degrease the cooking liquid, pour the sauce into the casserole, check the seasoning, mix and reduce.
  15. Top the turkey pieces with this sauce and sprinkle with the remaining sesame.
