  4. Remove the duck breasts 20 minutes before cooking.
  5. Peel the mangoes over a deep plate to get the juice of the cut and cut the flesh into small dice and reserve.
  6. With a sharp knife, cut deeply and regularly the fat of the skin of the breasts.
  7. Heat a non-stick frying pan (or casserole) on high heat and place the duck breasts on the skin.
  8. Cook for 8 minutes, watering the top of the breasts with the fat from the cooking.
  9. Season with salt and pepper and cook for another 2 minutes over low heat before removing from the pan with a pair of pliers (without drilling).
  10. Leave them waiting, wrapped in aluminum foil.
  11. Discard the fat, wipe the frying pan with a paper towel and put the butter to melt on medium heat; pour the mango dice into the foamy butter and lightly caramelize.
  12. Then pepper, pour the mango juice, bring to a boil and simmer for 3 minutes, mixing with a wooden spoon.
  13. Cut the magrets into slices, add the blood from the cut to the sauce. Mix everything (without annealing) and pour it on the slices of duck breast presented on hot plates.
  14. Tips: Dilute the mango juice if it is too thick or replace it with orange juice or strong tea.
