Fried rabbit with prunes

  2. Salt and pepper the rabbit from the refrigerator 1 or 2 hours before.
  3. In a large saucepan, pour an oil base and brown the pieces on all sides over high heat for about 15 minutes.
  4. Add the flour, mix and slightly reduce the intensity of the fire.
  5. Cover and cook for 10 minutes, turning the rabbit occasionally.
  6. Peel and chop the shallots. Add them to the pot and let them cook for about 5 minutes over low heat without letting them burn.
  7. Dip bacon for 20 seconds in boiling water to blanch, then drain.
  8. Wash the mushrooms. Add to the casserole mushrooms, bacon and prunes.
  9. Cover and cook on low heat for 5 minutes.
  10. Pour the Riesling wine into the casserole.
  11. Boil, cover and simmer for 5 minutes.
  12. Add the broth and cook another 30 minutes.
  13. Take the casserole out of the fire, add butter and tarragon to the cooking juices and mix with a wooden spoon.
  14. Serve hot.
