Rabbit skewers with peppers

  2. Prepare a barbecue.
  3. Cut rabbit meat into tiny cubes. Peel and finely chop the shallot.
  4. Put the rabbit meat in a dish. Sprinkle with shallot, thyme and cracked pepper.
  5. Sprinkle with white wine and marinate for 20 minutes.
  6. Meanwhile, wash the peppers thoroughly, seed them and cut into cubes.
  7. Dip the pepper cubes for 5 minutes in boiling water. Drain them and reserve.
  8. Drain the pieces of rabbit and prick them alternating with cubes of pepper. Place the skewers on a rack. Place the grill on the barbecue and cook for about 20 minutes, turning the skewers regularly.
  9. Serve at the end of cooking with white rice.
