  2. Peel and finely slice the onion.
  3. Cut the smoked breast into small bacon pieces.
  4. Heat the oil in a casserole.
  5. Add the bacon and onion to brown for 2 to 3 minutes. Add the rabbit pieces, chestnuts and the bouquet garni.
  6. Pour the white wine, salt and pepper, mix well.
  7. Cover and cook for 45 minutes over low heat.
  8. Serve with endives.
