  2. Cut the rabbit into pieces.
  3. In a large casserole heat 2 tablespoons olive oil, fry the pieces of rabbit.
  4. Remove and reserve.
  5. Put 2 tablespoons of olive oil in the casserole, slice onions and garlic, peel mushrooms, carrots.
  6. Cut them into slices and the celery stalk.
  7. Put in the casserole and leave to brown.
  8. Pour the white wine and broth.
  9. Add the rabbit pieces, the bouquet garni, salt and pepper lightly and let simmer for 45 minutes.
  10. Take a little broth in a bowl, and mix the mustards.
  11. Pour on the rabbit.
  12. Continue cooking for 30 minutes.
  13. Ten minutes before the end of the cooking time, pour the cream, adjust the seasoning if necessary.
  14. Serve with potatoes cooked in water.
