Roasted turkey with Portuguese

  1. ### Preparation ###
  2. The day before, put the turkey in a large container.
  3. Sprinkle with the slices of lemon and orange, bay leaf sauce and peppercorns.
  4. The next day, drain and dry the turkey impeccably.
  5. Using a syringe, inject the port into the white, in various places.
  6. Rub the turkey with coarse salt and pepper. Coat with half of the butter.
  7. Wrap the poultry in aluminum food.
  8. In the oven, place the grill and the griddle plate underneath.
  9. Pour broth into the baking sheet.
  10. Preheat the oven to 170ºC (thermostat 6).
  11. Put the turkey on the grill.
  12. Halfway through cooking, remove the aluminum foil and sprinkle the turkey with remaining butter, previously melted.
  13. It takes 12 minutes of cooking per 500 g, about 2 hours for a turkey of 4 kilos.
  14. Check the cooking by pricking a thin needle in the thickest part of the thigh.
  15. If the meat is still rare, prolong the cooking, being careful to cover the poultry with aluminum foil to prevent it from burning.
  16. Remove turkey from oven 30 minutes before cutting.
  17. Collect juice and scraps from the pan, add a little water if necessary and bring to a boil.
  18. Filter and rectify the seasoning.
  19. Dress in a gravy boat. Serve with the turkey.
  20. Serve with a mixture of rice and various vegetable purées.
