  2. Finely cut the beef. For this, it can be put in the freezer one hour to make it easier to cut.
  3. Put the meat in a container.
  4. Add 1/4 teaspoon of sodium bicarbonate.
  5. Add a tablespoonful of water and knead the meat evenly to distribute the baking soda evenly.
  6. Let stand overnight under stretch film.
  7. The next day, one hour before cooking, add the elements of the sauce: sugar, oyster sauce, Chinese wine, grilled sesame oil, soy sauce, pepper.
  8. Mix well and marinate for an hour.
  9. Cut the onions into slices.
  10. When cooking, finely chop the few slices of fresh ginger.
  11. Put a medium amount of oil (sunflower or grape seed) in a hot wok.
  12. Add the chopped ginger and garlic. Add the meat.
  13. Mix well to sauté the meat.
  14. Then add the sliced onions.
  15. The sauce disappears quickly and the meat will slightly caramelize.
  16. Cook as much as you want, the meat will normally remain very tender.
  17. Serve hot with a plain rice!

  19. We can of course make this dish in a more traditional pan. The dish will take longer to cook, but it does not change much to taste.
