  3. In a bowl, pour the flour, salt and pepper to taste and mix.
  4. In a second bowl, lightly whisk the egg whites with a fork.
  5. In a third bowl, mix orange zest, lemon peel, chopped mint leaves and bread crumbs.
  6. Wash and dry your whiting fillets with absorbent paper and cut into squares about 5 centimeters by 5 centimeters.
  7. Pass them one by one in flour, egg white and flavored bread crumbs and set aside.
  8. In a frying pan, heat the oil and cook the fish for about 3 minutes on each side in boiling oil. Let the breaded fish squares cool before skewering them in paper towels to remove the excess fat.
  9. Cook your quinoa about 10 minutes (respect the time indicated on the packet) in a large volume of salt water.
  10. Meanwhile, mix in a salad bowl the peeled and diced cucumber, the tomato washed and cut in small cubes, the peeled and finely chopped shallot, the finely chopped mint leaves and the lemon juice.
  11. Stir in your quinoa cooked and drained in the salad bowl.
  12. Add olive oil, salt and pepper (at your convenience) and mix.
