Squid and shrimp curry

  1. ### Preparation ###
  2. Arrange and wash the squid. Drain carefully and cut squid into thin rings.
  3. Put the olive oil, onion, garlic, coriander, chopped diced pepper and ginger in a saucepan.
  4. Heat and sauté until onion is tender and transparent.
  5. Add the squid rings. Season with curry, cumin, saffron, chilli and paprika.
  6. Mix well and cover. Simmer over low heat without adding any liquid until the squid is tender (about 35-40 minutes).
  7. Add yoghurt and shrimp. Mix well and cook until shrimp is cooked but still firm and sauce is tight and creamy.
  8. Season with salt and pepper. Serve immediately, with basmati rice.

Andouillette with white wine and mustard sauce

  2. Peel and chop the onion and shallots.
  3. Lightly brown the chopped onion and shallot in a little olive oil. Add the andouillettes and fry them.
  4. When golden brown, add the white wine and bring to a boil. Reduce the fire.
  5. In a bowl, mix the crème fraîche and the old-fashioned mustard and add the mixture to andouillettes.
  6. Cook for 5 minutes. ### Wine pairing ###
