  2. Rinse and sponge the squid.
  3. Detail them in strips and book them.
  4. Peel and chop the onions and garlic cloves.
  5. Wash the tarragon, peel the carrot and cut it into very small cubes.
  6. In a frying pan, over medium heat, melt in olive oil, onion, carrot and garlic for a few minutes without taking color.
  7. Add the squid, let them stiffen and pour the white wine, the coulis and the tomato paste.
  8. Season with salt and pepper and add the tarragon branch and oregano.
  9. Cover and simmer for 45 minutes.
