  2. Prepare a dough for donuts: remove and set aside 1 tbsp. cornstarch, dissolve the rest with half a glass of warm water and half the oil.
  3. This paste should be smooth, thick, but fluid.
  4. Cut the pork into very thin strips, season with a little salt and half of the ginger powder: mix them with the donut dough.
  5. Heat the lard and the remaining oil in which you brown the pork strips, well separated from each other. Turn them over, let them brown well over a low heat, they must be a little swollen and crispy.
  6. Drain them and keep them warm.
  7. Peel and finely slice the onions and spring onions.
  8. Peel the tomatoes and crush them after removing the seeds.
  9. Peel and chop garlic and celery. Throw all these elements into the cooking fat of the pork strips, let them lightly blonden but be sure to keep them a bit crisp.
  10. Season remaining ginger, add soy sauce, vinegar, caster sugar and last tablespoon of corn flour diluted in a tablespoonful of water.
  11. Let it gently thicken.
  12. Put the pork donuts back and warm them up for a few moments in this sauce.
