Turkey Fillet with Comté Sun Sauce

  2. Dip the raisins in cold water and bring to a boil.
  3. Remove from the heat without draining (do the day before, if possible).
  4. Cut the flesh of the pineapple into small cubes and cook for a few minutes with a little sugar and half a lemon juice.
  5. Salt and pepper the cutlets.
  6. Sauté them in a pan and keep them soft.
  7. Keep them warm.
  8. In a frying pan, sweat on chopped onion and chopped garlic.
  9. Pour the cream and let reduce a few minutes.
  10. Add the diced pineapple, chopped chives, grated Comté cheese and drained grapes.
  11. Simmer to obtain a slightly slippery sauce.
  12. Arrange the scallops on a dish and drizzle with sauce.
