Turkey escalope with mushrooms

  3. - 6 cutlets of turkey
  4. - 17.6 oz of Paris mushrooms
  5. - 2/3 cup of cream
  6. - 1.8 oz of butter
  7. - 1 bunch of chives
  8. - 2 tbsp. tablespoon of olive oil
  9. - salt pepper
  10. Clean the mushrooms and cut them in four.
  11. Chop the chives.
  12. Heat the oil in a frying pan, put in the mushrooms and sauté them over high heat.
  13. Season with salt and pepper, sprinkle with half of the chives and add the crème fraîche. Mix and cook on very low heat.
  14. Melt the butter in a pan, put the turkey escalopes and brown on high heat on both sides.
  15. Turn the heat down and continue cooking for 15 minutes, turning the cutlets regularly.
  16. Divide the mushrooms on the plates, add the cutlets, sprinkle with the remaining chives and serve immediately.
