Turkey fillets with green olives and tomato sauce

  2. Rinse and drain the olives. Cut them into slices.
  3. Cut the turkey into small cubes.
  4. Peel and finely chop the onion.
  5. Cook on low heat in a pan with a little oil for a few minutes.
  6. Add the turkey and brown over high heat. Season. When the meat is well colored, reserve it separately.
  7. In the same pan, heat the slices of olives, the crushed tomato and the bay leaves.
  8. Reduce the cooking juices on high for about 5 minutes, stirring then add the cream and put the turkey in the pan.
  9. Continue on high heat to finish cooking the meat, as soon as the sauce has thickened, remove from heat.
  10. Serve turkey fillets with hot olives and tomato sauce, served with fresh pasta or Camargue rice.
