  3. Preheat the oven th.8 (240 °).
  4. Put the turkey in a large oven dish or on the frying pan, spread it with butter, sprinkle with sprigs of thyme, salt and pepper.
  5. Put it in the oven and let it cook for 2 hours, basting frequently.
  6. Meanwhile, wash the fennel bulbs, drain them, cut them in four and blanch for 5 minutes in boiling salted water.
  7. Drain them.
  8. After an hour of cooking the turkey, add a glass of white wine and fennel, continue cooking.
  9. Drain the chestnuts, add them to the turkey and nuts 15 minutes before the end of the cooking.
  10. When the turkey is cooked, cut it out and arrange the pieces on a warm serving dish with the fennel, walnuts and chestnuts.
  11. Deglaze the sauce with the rest of the white wine by scraping the bottom of the dish with a wooden spatula.
  12. Present gravy sauce.
